There is nothing quite like a blueberry muffin in the morning.

Not to mention they go so well with a hot cup of your favorite coffee or tea and always with a cool glass of milk.
This is a very simple recipe that you will really enjoy.
This muffin is not overly sweet, taste wonderful and they will always turn out perfect. (I have yet to have a bad batch. *knocks on wood*)
Note: I used a short muffin pan and overstuffed the tops with the topping. *smile*
Recipe:
Muffin Ingredients:
- 1 ½ cup flour
- ¾ cup sugar
- ½ tsp. salt
- 2 tsp. baking soda
- 1/3 cup vegetable oil
- 1 egg
- 1/3 cup milk
- 1 cup blueberries * (cleaned)
- Pre-heat oven to 400 degrees and grease muffin tin.
- Combine flour, sugar, salt and baking powder. (I like to use a whisk to mix all ingredients.)
- Place vegetable oil in a 1 cup measuring cup; add the egg and enough milk to fill the cup (approx. 1/3 cup). Gently beat ingredients together.
- Mix the wet ingredients into the dry ingredients.
- Fold in blueberries.
- Fill muffin cups to the top and sprinkle with crumb topping.
- Bake 20-25 minutes. Let cool and enjoy!
* Hint: Place your blueberries in about 2 tbsp. of flour and gently roll them around until the berries are lightly coated. This will help them from sinking to the bottom of your muffin.
Crumb Topping Ingredients:
- ½ cup sugar
- 1/3 cup flour
- ½ cup butter
- 1 ½ tsp Cinnamon
Mix all ingredients with a fork (will resemble crumbs) and sprinkle over muffins.
