Today is/was National Cheesecake Day.
All I have to say is, “Mmmm..cheesecake.”
I adore a good slice of NY style cheesecake, to me there is nothing finer.
This is not cheesecake is not a NY style but is nice, creamy, light and refreshing on a hot summer day.
The recipe come from The Recipe Hall of Fame Cookbook, which is stuffed full of super recipes.

Quick Lemon Cheesecake

1 graham cracker crumb pie crust
1 8 oz cream cheese, softened
2 cups milk, skim (divided)
1 tablespoon sugar
1/2 teaspoon vanilla
1 package instant lemon pudding
- Beat cream cheese until soft.
- Blend in 1/2 cup milk.
- Add remaining milk,sugar, vanilla, and pudding mix; mix well.
- Pour into crust.
- Chill until firm.
You can top with whipped cream and strawberries or cherries.
