I wanted some sort of comfort food for dinner earlier this week and that meant stuffing.
Dh and I are the only two who eat it in our house; the boys will not touch it with a ten foot pole. How can that be?
I did not want to cook all day so it was a crock pot night.
This is a quick and simple meal that is full of comfort.
I added some mixed veggies in because I had them as leftovers in the refrigerator and thought they would make a nice addition.

Chicken & Stuffing Crock Pot Dinner

2 pounds chicken breast without skin
1 can cream of chicken 98% Fat Free Condensed Soup
1 can cream of mushroom 98% Fat Free Condensed Soup
1 can evaporated milk
1 package stuffing
1/2 cup butter -- melted
1/2 cup chicken broth
1 package mixed vegetables, frozen
- Mix soups, milk and broth together
- Spray lightly the inside of your crcok pot
- Combine stuffing and melted butter
- Place chicken in the crock pot, place stuffing mix over top, mixed veggies and then soup mixture.
- Cook on low for 7-8 hours or medium for 3-4 hours.
