I am a little late with getting this post up.
You see yesterday was National Chocolate Chip Cookie Day.
I told Spencer this and his reply was, “Will you make me some cookies to celebrate?”
How could I refuse?
I whipped up a batch of his favorite chocolate chip cookies, even with the blistering heat outside. We went through quite a few recipes until we found the one he liked. He was a bit like the Princess and the Pea but with cookies. They were either too hard or way too soft until we stumbled upon the prefect recipe.
I found it on Recipezaar and it uses instant pudding in the dough. I have to say these cookies are wonderful. They stay slightly soft and have a great taste.
It is never too late to whip up a batch of chocolate chip cookies.

Soft Batch Chocolate Chip Cookies

1 cup butter -- softened
1/4 cup sugar
3/4 cup light brown sugar -- packed
2 eggs
1 teaspoon vanilla extract
2 1/4 cups flour
1 teaspoon baking soda
1 package vanilla pudding mix - instant
1 chocolate chip
Preheat oven to 375 degrees.
- Mix butter, sugar, brown sugar, vanilla, and eggs together until creamy.
- Add the remaining ingredients and blend well.
- Bake until lightly browned.
- Store in air tight container.
