So, the next best thing was to try a new cobbler recipe and I really enjoyed the flavor of the peaches with the ginger. (not a big ginger fan here) The inside of the top crust was a bit softer than the other cobbler recipe I posted.
I don’t think that this one will disappoint you if it is the one you decide to make.

Peach Cobbler

Amount Measure Ingredient -- Preparation Method

13 peaches
1/4 cup sugar
1 teaspoon fresh lemon juice
2 teaspoons cinnamon
3/4 teaspoon powdered ginger
3/4 teaspoon vanilla
1/2 cup unsalted butter
1 1/4 cups flour
1/2 cup sugar
1/4 cup splenda
2 teaspoons baking powder
1 cup milk, skim
- Preheat oven to 350.
- Mix all ingredients for filling - first six ingredients.
- Set aside - filline will be juicier than most.
- Melt butter in a 9x13 baking dish in the oven.
- In another bowl, stir together flour, sugar, splenda and baking powder. Then add milk
- Mix until lightly blended.
- Pour over peaches filling that has been placed in the pan.
- Bake 45 minutes.
- Serve warm.
