Apple Coffee Cake - Recipe

With all the apples that we picked, I had to make something, anything!

Dh popped in Transformers (the movie from last summer and really enjoy) I wanted to watch it but the urge to bake was much stronger.

I looked through the various cookbooks I have sitting on our bookshelf and found one that struck my fancy.

The cookbook is from one of my elementary schools and I have to say the recipes from the book are simply wonderful.

A very quick and easy recipe that makes a wonderful soft textured cake that is not overly sweet.

It is a wonderful treat that just might become a hit in your house.

Apple Coffee Cake

Amount Measure Ingredient -- Preparation Method

1/2 cup butter
1 cup sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 cup sour cream, light
2 cups apples -- finely chopped
1 teaspoon ground cinnamon
1/2 cup brown sugar
2 Tablespoons butter -- melted

  • Heat oven to 350 degrees.
  • In mixing bowl, cream together the butter and sugar.
  • Add in the eggs and vanilla, mix well.
  • Sift together the flour, baking soda, baking powder and salt.
  • Add the flour mixture alternating with the sour cream.
  • Fold in the chopped apples.
  • Spread batter into a greated 13x9x2 baking dish.
  • Mix the brown sugar, melted butter and cinnamon together. Then spread the mixture across the top.

Bake 35-40 minutes.

NOTES :

You can add in 1/2 cup of chopped nuts to the ground cinnamon, brown sugar and butter.

Which apples did you use for this? I have Macoun and Cortland...

uh.. good question.
I would recommend not using a juicy apple (golden delicious, honey crisp)-any of the other apples should work out just fine.
Those that you mention would be great!
