I decided to bake some apple muffins today.
My mom used to make bread with this recipe every fall, enough to enjoy until the spring (freezing the extra loaves, of course).
This recipe is super easy and has perfect results every single time.

Hint...They are great slightly toasted with a tiny pat of butter.

Fresh Apple Muffins

3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 1/2 cups Canola oil
2 cups sugar
3 eggs
1 teaspoon vanilla
2 cups apples -- finely chopped
- Grease muffin tins.
- Heat oven to 350 degrees.
- Stir together flour, baking soad and salt.
- In a large bowl beat together oil, sugar, eggs and vanilla until combined.
- Gradually add in the flour mixture until smooth.
- Fold in apples and spoon in prepared muffin tins.
- Bake until toothpick inserted in the center comes out clean.
- They should bake for about an hour.

NOTES :
- Will make two loaves of bread or 16 muffins.
- I tend to add in only 1 1/4 cup of oil to the recipe, any more too greasy and too little they come out a bit dry.
