Last Saturday Spencer and I made hush puppies to go with the fish we were having for dinner.
I hit my cookbooks to find a recipe that I could use and came up with this one.
The hush puppies were good, though I have to admit that I would add a bit more onion to the mix.
I know they are not the healthiest item to eat but they were a nice treat.
I have not made them in years and it was fun to try something a bit different.

Hush Puppies

1 1/2 cups corn meal
1 1/2 cups water
1/3 cup skim milk
1 tablespoon canola oil
2 teaspoons onion -- grated
2 large eggs
1 cup all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1 tablespoon sugar
- In a saucepan combine the cornmeal and water.
- Cook over medium heat, stirring constantly, until the batter becomes thick and begins to take the shape of a ball.
- Remove the pan from the heat. Add the milk, oil and onions.
- In a large mixing bowl beat the eggs. Pour the batter into the eggs. In a separate bowl sift together the flour, baking powder, salt and sugar.
- Add the dry ingredients to the batter, and mix well.
- In a heavy, deep skillet heat the cooking oil to 350 degrees. Drop the batter by the teaspoonful into the oil.
- Fry for 5 minutes or until light golden brown.
- Drain on paper towel.
