Low Fat Alfredo Sauce - Recipe

I adore alfredo sauce but not all the calories that go along with it.
This recipe was dusted off last week to curb my craving for that wonderful creamy sauce.
Ahh, so good!
I think you will enjoy this creamy, delicious sauce; I know we did.

Low Fat Alfredo Sauce

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 cup evaporated skim milk
1/2 cup half and half
2 tablespoons butter -- cut into small pieces
1 1/2 cups Parmesan cheese -- grated
2 tablespoons chives -- fresh

  • Cook the pasta according to the directions on the package.
  • Meanwhile, in a medium saucepan, heat the milk, half and half and butter over medium heat just until the butter is melted and the mixture is hot.
  • Gradually stir in 1 1/4 cups of the Parmesan cheese. Cook and stir just until the cheese has melted.
  • Stir in your cooked pasta - fettuccine or tortellini.
