Quick, easy and very tasty.
This recipe is one that you can make the night before, then simply pop in the oven the next night and have a wonderful meal.
I omit the water and cook the shells until they are slightly soft when I am not going to place it in the refrigerator overnight.

Mexican Manicotti

1 pound lean ground beef
16 ounces low fat refried beans -- 1 can
2 1/2 teaspoons chili powder
1 1/2 teaspoons oregano
8 ounces manicotti shells -- 1 pkg
2 1/2 cups water
16 ounces picante sauce
2 cups light sour cream
1 cup shredded Colby Jack cheese
1/4 cup green onions -- sliced
- In a bowl, combine the uncooked beef, beans, chili powder and oregano.
- Spoon into uncooked manicotti shells; arrange in a greased 13 x 9 x 2 inch baking dish.
- Combine water and picante sauce; pour over shells. cover and refrigerate overnight.
- Remove from the refrigerator 30 minutes before baking.
- Cover and bake at 350 for 1 hr.
- Uncover; spoon sour cream over the top. Sprinkle with the cheese, onions and olives if desired.
- Bake 5-10 minutes longer or until the cheese is melted.
