Ham & Potato Casserole - Recipe



DH wanted to use up some of the potatoes that were sitting around.
I chimed in and mentioned that we could use up some of the ham we had yesterday for New Year's Day, we had a plan. :)

The boys were recruited to wash and peel the potatoes with a few grumbles but they did a great job.
Next up was to layer them in a large 9x13 inch baking dish, and put the yummy goodness over top to create a tasty casserole.
The recipe below is one that I whipped together tonight and it was a huge hit. Now the ingredients were all eyeballed so if you feel you would like more or less of an item go for it. One thing I am known for when I cook without a recipe is not measuring; I get that from my Grandma. *blush*
I can say in my defense that I am good with judging amounts.



So, if you make it for your family hopefully it will be just as big of a hit as it was here.

Ham & Potato Casserole

6 Russet potaotes
1 cup ham chopped up
2 cans 98% FF Cream of Chicken Soup
1/4 cup low fat sour cream
1/2 cup mild cheddar cheese - shredded
2/3 cup white sharp cheddar cheese -shredded
2/3 - 3/4 cup of milk (you want it thick but not too thick)
black pepper to taste
onion powder to taste

  • Cut your potatoes thin and place in a sprayed 9x13 inch baking dish.
  • Place the milk cheddar over top.
  • Add milk, sour cream, soup black pepper and onion powder, mix and place over the cheese.
  • Top with the white cheddar cheese.
  • Place in preheated 350 degree oven for about one hour.
  • Enjoy!
