Brushetta Chicken ... Recipes

This is one tasty recipe that I have been wanting to share with you for some time now.

Tasty, fresh and easy to make which make this perfect for the summer.

Your family will simply enjoy this recipe and will soon become a fast favorite of yours.

Bruschetta Chicken

Amount Measure Ingredient -- Preparation Method

1/2 cup flour
1/2 cup egg substitute
4 chicken breast without skin
1/4 cup Parmesan cheese -- grated
1/4 cup Panko flakes
1 tbl butter -- melted
2 large tomatoes -- chopped
2 large garlic cloves -- minced
2 tablespoons chives -- chopped
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoons pepper

  • Place flour and egg substitute in separate shallow bowls.
  • Dip chicken in flour, then in eggs; place in greased 13x9 inch baking pan.
  • Combine the Parmesan cheese, bread crumbs and butter; sprinkle over chicken.
  • Loosely cover baking dish with foil. Bake at 375 for 20 minutes. Uncover; bake 5-10 minutes longer or until meat thermostat reads 170.
  • Meanwhile in a small bowl; combine the remaining ingredients. Spoon over the chicken. Return to the oven for 3-5 minutes or until tomato mixture is heated.

Serving Ideas : Great with a tossed salad. :)

NOTES:
  • I used fresh chives and some dried oregano in place of the basil.
  • Subbed in Panko flakes for breadcrumbs.
