We are trying to get a bit more fish into our diets lately.
I love fish and could eat it every day but that really is not too feasible so I make do where I can.
DH prefers his fried (I am working on that aspect) so we will serve some every so often fried.
This is one recipe that is quite tasty, very easy and a family pleaser which is always an important factor. :)
I would think you could sub in Cod or Haddock without a problem.

Parmesan Crusted Tilapia

1/2 cup all-purpose flour
1 large egg -- beaten
1/2 cup crackers -- Ritz
1/4 cup Parmesan cheese -- grated
1/2 teaspoon salt
20 ounces Tilapia Fillet -roughly 4 fillets
2 Tablespoons Olive Oil
- Place flour and egg in separate shallow bowls.
- In another shallow bowl, combine the crackers, cheese and salt.
- Dip fillets in the flour, egg, then cracker mixture.
- In a large skillet, cook fillets in oil over medium heat for 4-5 minutes on each side or until golden brown and fish flakes easily with a fork.
